Most people walk up to the bar, order a beer, and don't think much about what happens between the keg and the glass. That's kind of the point — when everything's working right, you shouldn't have to think about it. You just enjoy a cold, crisp pint and get back to the conversation.

But behind every good beer at McCoy's, there's a whole chain of decisions, habits, and technical know-how that makes it possible. Pull back the curtain a little and it gets genuinely interesting — not in a nerdy lecture kind of way, but in a "huh, I never thought about that" kind of way.

So let's talk about what actually goes into serving great beer.

The Lines Matter More Than You'd Think

Here's something most bar-goers never consider: the beer traveling through those tap lines has a long journey before it ever hits your glass. Draft lines run from kegs stored in a cooler — sometimes quite a distance away — through a pressurized system and out through the faucet at the bar. Every inch of that journey is an opportunity for something to go wrong.

Beer lines need to be cleaned regularly — at McCoy's, that's a non-negotiable part of the routine. When lines aren't cleaned on a proper schedule, bacteria and yeast residue build up inside the tubing. The result? Beer that tastes flat, sour, or just "off" in a way that's hard to pin down but impossible to ignore. Line cleaning isn't glamorous work, but it's one of the single biggest factors separating a pub that takes its beer seriously from one that doesn't.

Temperature Is Everything

Cold beer is good. But "cold" isn't just one thing — different styles of beer actually have different ideal serving temperatures, and getting that wrong can completely change the drinking experience.

Most American lagers and light beers taste best served very cold, somewhere in the 35–40°F range. Ales, IPAs, and amber beers often shine a little warmer — closer to 45–50°F — where their hop character and malt complexity have room to breathe. Serve an IPA ice-cold and you'll mute a lot of what makes it interesting. Serve a light lager too warm and it starts tasting like something you forgot on the counter.

At McCoy's, the walk-in cooler is kept at a consistent temperature, and the glycol cooling system running through the tap lines keeps the beer at the right temp all the way to the faucet. It's one of those invisible systems that most customers never think about — until it breaks down and suddenly every pint tastes warm and sad.

The Pour Itself Is a Skill

There's a reason experienced bartenders tilt the glass. Pouring draft beer straight down creates excessive foam, which isn't just annoying — it actually releases carbonation too aggressively and affects the final taste. The proper technique involves holding the glass at roughly a 45-degree angle, letting the beer flow gently down the side, then gradually straightening the glass toward the end of the pour to build a proper head.

That head — the foam on top — isn't just aesthetic. A good half-inch to inch of foam serves as a lid that traps aromatics and keeps carbonation in the beer longer. It's also a sign that the carbonation levels in the keg are properly balanced. Too much foam? The CO2 pressure is probably set too high or the beer is too warm at the tap. No foam at all? Something's off in the other direction.

Glassware Isn't Just for Show

You've probably noticed that different beers come in different glasses at McCoy's. That's not just us trying to look fancy — glassware shape genuinely affects how a beer tastes and smells.

A pint glass is a workhorse: versatile, easy to handle, great for ales and lagers. A tulip or goblet-style glass is designed to trap and concentrate hop aromas, which is why you'll often see Belgian ales or stronger craft beers served that way. A tall, narrow pilsner glass maintains carbonation and showcases the clarity of lighter beers.

Glassware cleanliness is just as important as the shape. Glasses that aren't fully rinsed or that have any residual grease or soap film will kill the head on a beer almost immediately. The technical term is "nucleation" — tiny imperfections and residues on the inside of a glass affect how carbonation behaves. A properly cleaned glass actually helps a well-poured beer maintain its head and carbonation longer.

If you ever get a beer at McCoy's and notice the foam collapses almost instantly, it's worth a mention to your bartender. Nine times out of ten, they'll want to know.

None of this is meant to make you overthink your beer order. The whole point of all this behind-the-scenes work is that you shouldn't have to think about it. You should just be able to sit down, order your usual, and have it show up tasting exactly right.

But if you're curious, next time you're at the bar, watch the pour. Notice the angle, the foam, the way the bartender lets the glass settle. Order something you haven't tried before and pay attention to how the temperature affects the flavor as the glass warms slightly in your hand.
